This recipe is awesome. It can be made into a regular loaf or mini sized (compliments of a muffin tin). Regular meatloaf takes more than an hour to make. This takes less than half the time! Makes me like it even more.
3/4 cup milk
2/3 cup bread crumbs
1/4 cup chopped onion
1/4 cup Parmesan cheese
1 1/2 cup shredded cheddar cheese
1/4 cup chopped bacon (I used Hormel bacon pieces)
1 1/2 lbs ground beef (you can substitute ground turkey for a healthy twist)
3 squirts ketchup
3 squirts mustard
2 tbsp brown sugar
If cooking as a loaf: bake for 1 hour. If cooking in muffin tins: bake for 20 minutes. While it is cooking, put all sauce ingredients in a small bowl and mix well. Make sure there are no lumps of brown sugar!
