Mini meatloaf: bacon cheddar!

This recipe is awesome. It can be made into a regular loaf or mini sized (compliments of a muffin tin). Regular meatloaf takes more than an hour to make. This takes less than half the time! Makes me like it even more.

2 eggs
3/4 cup milk
2/3 cup bread crumbs
1/4 cup chopped onion
1/4 cup Parmesan cheese
1 1/2 cup shredded cheddar cheese
1/4 cup chopped bacon (I used Hormel bacon pieces)
1 1/2 lbs ground beef (you can substitute ground turkey for a healthy twist)

Topping
3 squirts ketchup
3 squirts mustard
2 tbsp brown sugar

Preheat the oven to 400 (if using muffin tin) OR 350 (if using a loaf pan). Mix eggs and milk in a large bowl.

Add bread crumbs, onion, Parmesan cheese, cheddar cheese, and bacon.

Stir well.

Add the ground beef and roll up your sleeves! Smush everything together.

Break out your loaf pan or muffin tin and fill it up.

If cooking as a loaf: bake for 1 hour. If cooking in muffin tins: bake for 20 minutes. While it is cooking, put all sauce ingredients in a small bowl and mix well. Make sure there are no lumps of brown sugar!

When done, take meatloaf out of the oven and try to spoon off any excess fat that has pooled at the top.

Add the topping and cook for another 10 minutes (both versions).
