We were introduced to this yummy recipe while having dinner at cousin Tina’s house (she made it gluten free for us!) I made a couple small alterations (we love bacon) and here we go!
4-6 medium potatoes
1/2 cup butter
1/2 cup milk
1 cup shredded cheddar cheese (separated into 2 1/2cup servings)
Preheat oven to 375.
Boil potatoes for 45 min -1 hour until soft. (I did this the night before and stored in Tupperware). In a small bowl, heat butter and milk in the microwave until butter has melted. Stir.
Add the butter/milk to the potatoes and mash everything together. I usually don’t like lumpy potatoes but left small lumps for some texture.
Stir in 1/2 cup cheddar cheese and bacon bits. Mix well.
