Oatmeal raisin cookies

These are my husband’s favorite cookie! Soft and chewy.

As always, these cookies are easily made gluten free by making sure your oats are ok and your flour is GF.

Yields 4 dozen cookies

2 cups brown sugar
1 cup shortening
2 eggs
2 cups flour
3 cups oatmeal
1 1/2 tsp baking soda
2 tsp vanilla
1 tsp cinnamon
1/2 cup raisins
1 tsp xantham gum (if making GF)

Preheat the oven to 375. Break out your mixer and blend the sugar and the shortening. Add eggs and vanilla.

Slowly stir in flour (with xantham gum) and baking soda. Then add the oats and cinnamon. Raisins go in last.

Use a 1″ scoop and place your dough onto a cookie sheet. I lightly flattened the tops. 20130602-221808.jpg

Bake for 12-15 minutes then transfer to a cooling rack.
