Bags of potatoes were buy 1 get 1 free at the grocery store. I used some in the previous post with chicken. I still have a lot of potatoes. What else can I use them for?? Time to dig through my recipes.
I don’t like potato salad. My husband loves it. Mom sent me this recipe last summer after my husband decided to take all the leftovers of it home from a dinner over there. Since I don’t know how it should taste, it makes for an interesting time cooking it. He loves this recipe, so I don’t have to stray or experiment luckily.
6-8 medium round red or white potatoes
3/4 cup mayonnaise
1 tablespoon vinegar (if making GF, make sure your vinegar is ok! I recommend Rice Vinegar)
1 tablespoon yellow mustard
1 stalk celery, chopped
1/2 medium onion, chopped
Peel and boil the potatoes for about 30 minutes with a cover on the pot.
When there’s about 10 minutes left, add the eggs to the pot to hard boil.
Mix mayonnaise, vinegar, mustard, onion, and celery in large bowl.
Scoop the potatoes out of the pot. If they smush easily, they’re good to go!
Cut the potato in small chunks.
Peel the eggs and chop up.
Add potatoes and eggs to the mayo mixture bowl.
Sprinkle some paprika on top and give it a good stir.
Refrigerate for about an hour before eating. Makes about 4-6 servings.
