Burrito casserole

Whenever I’m stuck in a rut over what to make for dinner, I like to create casseroles. Tonight I created a Burrito Casserole. It turned out pretty good! As usual, by just watching specific brands I made it gluten free.

2 chicken breasts (I have started to use Trader Joe’s precut grilled and seasoned strips- saves time and they have a great flavor)
2 burrito/tortilla shells
1 can refried beans
2 cups rice
Taco seasoning
Shredded Mozzarella cheese
Shredded cheddar cheese

Sour cream

Preheat the oven to 375. Cut the chicken into cubes and sprinkle on some taco seasoning.
Bake for 30 minutes. I took it out and stirred half way through.
While the chicken is cooking, cook the rice.
Once the rice and chicken are cooked, place a tortilla on the bottom of a 9×9 pan or casserole. 20130211-220552.jpg
Smooth out the refried beans for the next layer.
Pour the pieces of cooked chicken over the beans.
Next spread the rice over the chicken.
Optional: add a layer if cheese. I did a half cup of mozzarella and a half cup cheddar.20130211-221522.jpg
I then sprinkled more taco seasoning over the cheese.
The second tortilla goes on top. I tucked/pressed the sides in to make sure it was secure.
I spread a little salsa across the top with some more cheese. 20130211-222119.jpg
Bake for 15 minutes or until the cheese has melted. 20130211-222410.jpg
Enjoy with sour cream or salsa!
