I found this recipe on Rachel Ray and have adapted it slightly. I made it gluten free just by using GF flour instead of regular flour. I tried it for the first time as a Superbowl appetizer and they were loved by all. Go 49ers!
1 1/2 cups flour
1 1/2 tsp baking powder
2 tbsp Italian seasoning
1 1/2 cups milk
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
2 cups cubed pepperoni ( I used 1 pack of Hormel mini pepperoni)
Optional: pizza sauce for dipping later
Preheat oven to 375. Grease muffin tins if not non-stick. In a large bowl, mix flour, baking powder, and Italian seasoning.
Add in milk and eggs.
Add mozzarella cheese, cheddar cheese, Parmesan cheese, and pepperoni.
Let it sit for 10 minutes.
Scoop the mixture into the muffin tins.
Bake for 35-45 minutes until the tops brown.
Dip in pizza sauce if you want the pizza experience. Enjoy!
