Chicken Alfredo casserole .. With broccoli!

I found a couple versions of this on Pinterest and figured I’d give it a whirl. We love fettuccini Alfredo and chicken and broccoli… And I love creating casseroles. Sounds like perfection! Most recipes are for a full casserole and since this is a newbie I halved it. The measurements below are for the 9×9 pan I used, which is as close to half a casserole as I could figure out.

Ingredients:
1/2 lb macaroni shells
1 large chicken breast
1 cup chopped broccoli (defrosted)
8 oz Alfredo sauce (Ragu is gluten free)
2 cups shredded cheddar cheese (separate into 2 1-cup servings)
Pepper to taste

Preheat oven to 350. Season the chicken with a little pepper and cook for a half hour in the oven.

While the chicken is baking, cook the pasta.

Once the chicken is done, I chopped it up into bite sized pieces.

Take out your pan, and add in chicken, pasta, broccoli, Alfredo sauce, and one of the cups of cheddar cheese.

Mix well!

Sprinkle the other cup of cheese on the top.

Bake for 30 minutes.

It looked a little dull, so I turned the broiler on for a few minutes.

I will definitely be making this again! Maybe even full sized!

Todd just finished his bowl and while getting up to get seconds says, “love it. Would not change a thing! I think I like this better than regular fettuccine Alfredo with Chicken and broccoli .. It’s gotta be the cheddar cheese!”

    • Steam the broccoli, bake the chicken and use low fat Alfredo sauce for a healthy meal! If you’re feeling super motivated you can use gluten free pasta. (Which I would give you helpful hints on the right way to cook it lol).
