My favorite meatloaf

I grew up enjoying two great meatloaf recipes, one from Mom and one from Grandma. My husband grew up liking a certain type of meatloaf as well. Of course this made it interesting the first time I decided to make meatloaf. I started with a classic recipe from Better Homes and Garden cookbook; you know, the big one with the plaid cover that everyone owns. I mixed in a few aspects of our childhood memories of meatloaf and bam! A classic was born. As always, this is gluten free but is easy to make “normal,” it just depends on your breadcrumbs.

2 eggs
3/4 cup milk
2/3 cup bread crumbs
1/4 cup chopped onion
1/4 tsp parsley
1/4 tsp sage
1/4 tsp basil
1/4 tsp oregano
1/4 cup Parmesan cheese
1 1/2 lbs ground beef (you can substitute ground turkey for a healthy twist)

3 squirts ketchup
3 squirts mustard
2 tbsp brown sugar

Preheat oven to 350. In a medium bowl, combine eggs and milk.

Add onion, breadcrumbs, parsley, sage, basil, oregano, and Parmesan cheese.

Mix well.

Add ground beef and get those hands dirty! Smush all the ingredients until everything is thoroughly blended.

Place in a loaf pan and bake for 1 hour.

While the meatloaf is cooking, get a small bowl and prepare the topping. Pour all ingredients in the bowl and mix well.

Make sure to get all the lumps out.

Once the hour on the loaf is complete, spoon off all the fat that pooled at the top.

Spoon on the sauce topping and cook for another 10 minutes.
