Stuffed shells

I’m back!! Had a great vacation but we were definitely ready for some home cooked food. On a positive note, one of my brothers got engaged! We were thrilled and are very excited for them. She is still in college, so we have a few years to plan 🙂

I’ve been sitting on a box of GF shells and decided to be creative tonight. I’ve had stuffed shells a few times but have never made them. I decided to be bold and just wing it. Here goes!

Box of GF shells
Ricotta cheese (1lb give or take)
Spinach (I used a large fistful of frozen spinach)
Pasta sauce
Mozzarella cheese

Boil the pasta. My box of Tinkyada had about 32 medium shells. 20130122-193617.jpg
While pasta is cooking, I defrosted the spinach. 20130122-193648.jpg
I added ricotta by the spoonful until I liked the ratio (about a pound container. I love ricotta)20130122-193908.jpg
I sprinkled some mozzarella in also. Mix it all up!
Once the shells are cooked, I let them cool for about 10 minutes. I poured a little sauce on the bottom of a glass pan so the shells won’t stick. 20130122-194156.jpg
CAREFULLY pick up a shell, and spoon some of the ricotta mixture into it. 20130122-194422.jpg
Place into the pan and sprinkle some mozzarella over the top.
Bake for 25-30 minutes at 350. You may want to spoon some more sauce on top.
