Peanut butter cookies.. With or without kisses!

My husband doesn’t really go for desserts. Expect peanut butter cookies. I’ve made a lot of peanut butter cookies in our years together. This recipe, adapted from Better Homes and Gardens, is the winner. I modified it slightly so it is now gluten free! If you don’t need them GF, just nix the xantham gum and use “regular” flour.

Supposedly this yields 36 cookies, but using the 1″ scoop as they recommended, I made 65. Baker beware.

1/2 cup butter
1/2 cup peanut butter
1 cup granulated sugar (separate into halves)
1/2 cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1 egg
1/2 tsp vanilla
1 1/4 cups flour
1/4 tsp xantham gum (only if making GF)
1 bag Hershey Kisses (optional)

1) mix butter and peanut butter with an electric mixer in a large bowl.

2) add 1/2 cup sugar, brown sugar, baking soda, and baking powder. Make sure to scrape the sides of the bowl!

3) add in egg and vanilla, mix well.

4) add in flour (and if making this GF, the xantham gum).

5) dough shouldn’t be too thick. It will be a little difficult handle, so if you are not using a scoop then refrigerate for an hour or so.

6) preheat oven to 375. Shape dough into 1″ balls. I used a scoop to make sure everything was uniform in size.

7) take your other 1/2 cup sugar and pour on a plate. Scoop a ball of dough and drop it on the plate. Roll it around in the sugar and then place on your baking sheet.

8) place the dough balls 2″ apart on the baking sheet. If you are NOT using Kisses and making plain peanut butter cookies: take a fork and make the classic hash marks lightly on the cookie.

If you ARE planning on using Kisses, count how many cookies are on your baking sheet before putting them in the oven. Pop the sheet in the oven for 10 mins. Rip open hour bag of Kisses, count out the number you need, and start quickly unwrapping!!

9) once the oven beeps, grab the Kisses and gently press them into the center of the cookie. You want it to smush the cookie but not to go through all the way to the pan.

10) immediately transfer cookies to cooling racks and repeat!
