My husband doesn’t really go for desserts. Expect peanut butter cookies. I’ve made a lot of peanut butter cookies in our years together. This recipe, adapted from Better Homes and Gardens, is the winner. I modified it slightly so it is now gluten free! If you don’t need them GF, just nix the xantham gum and use “regular” flour.
Supposedly this yields 36 cookies, but using the 1″ scoop as they recommended, I made 65. Baker beware.
1/2 cup butter
1/2 cup peanut butter
1 cup granulated sugar (separate into halves)
1/2 cup brown sugar
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp vanilla
1 1/4 cups flour
1/4 tsp xantham gum (only if making GF)
1 bag Hershey Kisses (optional)
8) place the dough balls 2″ apart on the baking sheet. If you are NOT using Kisses and making plain peanut butter cookies: take a fork and make the classic hash marks lightly on the cookie.
If you ARE planning on using Kisses, count how many cookies are on your baking sheet before putting them in the oven. Pop the sheet in the oven for 10 mins. Rip open hour bag of Kisses, count out the number you need, and start quickly unwrapping!!
