I make a lot of “creations” for dinner. Some good, some pretty weird, some soon forgotten. Tonights creation was pretty good. I may make a few tweaks in the future to season the chicken (maybe a mild rub?) and am always open to suggestions!
-4 chicken breasts
-3 tablespoons ricotta cheese
-1/4 red pepper, diced small
-handful shredded mozzarella cheese
-handful shredded cheddar cheese
Preheat the oven to 375.
Flip chicken breast over. With a sharp knife, slice through the middle. It helps to follow the shape of the chicken.
In a small bowl, mix ricotta, Mozzerrella cheese, red pepper. Add lemon (I used a squirt lemon and gave it two big squirts).
Pour mixture into opening in chicken. Sprinkle cheddar cheese over the chicken.
Place in a glass dish and cook for 30 mins.
